Potato Pasta Casserole

Ingredients

  • 1 12-oz pkg. regular or low-protein noodles
  • 4 large potatos diced
  • 1 cup diced celery
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. black pepper
  • 1 6-oz can tomato paste
  • 1 4-oz can mushroom stems and pieces (drained and rinsed)
  • 4 oz sour cream
  • 3 tbs. cottage cheese
  • 1/4 lb grated sharp cheddar cheese


    1. Prepare noodles according to package directions.

    2. Drain in colander, rinse with cold water and set aside.

    3. Brown potatos (and sautÃe celery until tender).

    4. Add seasonings, tomato paste, one tomato-paste can of water and mushrooms.

    5. Place noodles in large bowl; mix in sour cream and cottage cheese.

    6. Line bottom of 9" x 13" baking dish with noodle mixture.

    7. Top with potato mixture. Sprinkle cheddar cheese on top.

    8. Bake at 350, until cheese melts and casserole is heated through.

    9. Let cool and serve this excellent low calorie vegetarian recipe!

Split Pea Cabbage Rolls

Ingredients

·        1 c. dry split peas

·        1 ½ c. low sodium tomato sauce

·        1 tomato, chopped

·        1 onion, chopped

·        1 garlic clove, minced

·        1 tbs. olive oil

·        1 tsp. hot pepper sauce (or to taste)

·        8 large cabbage leaves

·        2 c. water

 

    1.Combine peas, sauce, tomato, onion, garlic, hot sauce and oil in large pot or      

    2.Bring to boil or to pressure point; reduce heat and cook for 10 minutes  

    3. Preheat oven to 350 degrees.

    4. Steam cabbage leaves in steamer until tender; drain and let cool.

    5.Place about 3 tbs. of split pea mixture in center of each leaf.

    6..Roll up and place in 13” x 9” baking dish coated with cooking spray.

    7. Pour water over rolls and bake until heated through, about 20 minutes.

Vegan Apple Crisp

Ingredients

  • 1 c rolled oats
  • ½ c of flour
  • ½ c brown sugar
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ½ c earth balance butter
  • 4 c of peeled apples

    1. 8x8x2 pan or 2qt baking dish.

    2. place rolled oats, flour sugar salt and cinnamon in large bowl and mix.

    3. add butter and blend well. arrange apple slices on top.

Vegetarian Hominy

Ingredients

  • 2 Tablespoons of flour
  • 2 Tableshpoons of oil
  • 2 TBS onions, diced
  • 3 TBS green bell pepper diced
  • 1 tomato, sliced
  • 29 oz hominy
  • 2 C of water
  • 1/2 tsp garlic salt
  • ¼ ts oregano
  • 1 dash pepper

  1. Brown flour in oil.
  2. Add onion and saute.
  3. Add bell pepper and tomato; stir over medium heat.
  4. Stir in drained hominy, water and seasonings.
  5. Cover and simer for 15 minutes over medium heat, stirring occasionally.

Fruit Kabobs

Ingredients

  • 1 m apple
  • 1 m banana
  • 1 m fresh peach or nectarine
  • 1 m pear
  • 2 slices fresh pineapple
  • 2 Tbs brown sugar
  • 2 Tbs lemon juice
  • 2 Tbs canola oil
  • 1 tsp cinnamon

1. Peel and cut fruit into 1 inch chunks. Thread fruit onto 8 pairs of soaked bamboo skewers, alternating varieties (use two skewers per kebab to keep fruit from rotating while turning skewers on grill).

 

2. In a small bowl, combine remaining ingredients to make basting sauce.

 

3. Grill kebabs uncovered over medium heat for 6 minutes or until heated through, turning and basting with sauce often.
