If you're a vegetarian, you may find it hard to follow a low carb diet. Most vegetarian meals are high in carbohydrates. But they don’t have to be. If you are interested in becoming a low carb vegetarian, follow these basic guidelines.
Tofu, and many of the imitation
meat products make fine low carb choices. Concerning
vegetables, skip the potatoes and carrots Greens, and cauliflower
are a great substitute for potatoes or rice.
Vegetables which
are low on the glycemic index, such as spinach, broccoli, romaine lettuce,
cucumbers with the skin on, etc are your best low carb choices. Soy is also
great a great way to get good protein and low carbs. Eating beans in moderation
can be fine as well. ½ cup of beans is probably about the maximum if you want to
be a low carb vegetarian. This amount has about 20 grams of carbs and 7 grams of
fiber.
Veggies
Salad greens,
leafy vegetables, cabbage, cauliflower, watercress,celeriac, chard, collard
greens, cucumber, broccoli, brussel sprouts, eggplant, garlic, green ,
snow peas, tomatoes, tomatillo, turnips, water chestnuts, , yellow squash
& zucchini.
Fruits:
Blueberries,
grapefruit, cranberries, peaches, strawberries, raspberries, cantaloupe
Nuts:
Almonds, walnuts, pecans, and cashews are good choices.
Legumes:
Soybeans,
black eyed peas and kidney beans.
Dairy
· Eggs (not fried)
· Low-carb yogurts
· Soy and coconut milk
· Hard cheeses
